In a celebration of all things slow, The Cooperage will be opening a brand new brew-pub at 92 Edward Street! This microbrewery allows anyone to wonder in, learn and be involved in the brewing process in an environmentally conscious and slow approach that focuses on being water friendly.
With the rising awareness of drought effected areas, the cooperage has hopped on the bandwagon to spread the word about how serious the effects will be if nothing changes. Beer alone will suffer tremendously, because with the changes in hops, barley and malt growing, so comes the change in flavour – and not for the better!

After the public have involved their body and mind in the brewery downstairs, they can wonder upstairs and be immersed in the more enjoyable side of brewing – drinking! People will be able to taste their hard work in action as they pour themselves a nice pint of ale, stout, lager or whatever is on offer at the time. As the take down their “slow” beer, they can wonder at the interior of the bar, which is designed in the image of the barrel. With an oak panelled ceiling that curves down one side of the building and into multi-levelled tables, they can understand the effects that the wood has on beer. How the smell, texture and grain effect the beer in the smallest of ways. The panelling will be used from recycled barrels and will already be ingrained with the sweet scent of beer.
